Italian Style Potato Soup

Now, this is one of my favorite soup recipes and I know after you get a taste it will become a favorite of yours as well. This is a great soup recipe to make during the cold winter months and will leave you feeling satisfied and warm.

Yield: 6 Servings

Cooking Time: 40 Minutes

List of Ingredients:

2 Heads of Garlic

2 ½ Tablespoons of Olive Oil, Extra Virgin Variety and Evenly Divided

2 Cups of Onion, Finely Chopped and Evenly Divided

½ teaspoons of Black Pepper, Fresh and For Taste

¼ teaspoons of Salt, For Taste and Evenly Divided

2 ¼ Pounds of Potatoes, Yukon, Gold in Color, Peeled and Cut Into Cubes

4 Cups of Chicken Broth, Low in Sodium and Free of Fat

1 Cup of Half and Half

4 Ounces of Pecorino Romano Cheese, Evenly Divided

6 Ounces of Italian Sausage, Hot and with Casings Removed

1 Ounce of Pancetta, Finely Chopped

1 Cup of Kale, Fresh and Finely Chopped

¼ Cup of Sage Leaves, Fresh and Roughly Torn

2 Tablespoons of Pine Nuts, Toasted
